Large wholemeal Lebanese flat bread as pizza base

1 tbs Tomato paste

2 pieces lean middle bacon (diced)

½ cup pumpkin (diced)

1 cup baby spinach

½ small capsicum (sliced)

4 medium mushrooms (sliced)

½ cup low-fat cheddar or mozzarella cheese (grated)

1 tbs barbeque sauce


Place pumpkin in the oven with a light spray of olive oil, bake on 180 degrees for 20-30 minutes or until cooked and golden. Meanwhile, cook bacon in a pan until brown. Spread the tomato paste on the pizza base, add cooked pumpkin (try mashing it down with a fork and spreading it over the whole base). Add baby spinach, bacon, capsicum, mushrooms and cheese. Finish by drizzling the barbeque sauce. Cook pizza in pre-heated oven at 180 degrees for approximately 30 minutes.
